Chicken Salad with Orange and Mint

I make a seasoning for the chicken. I mix a couple of teaspoons each of nutmeg, cinnamon, cumin, paprika and ground ginger. I coast the chicken breasts with the spice. Any left over can be kept in an airtight container.

Fry the chicken until tender. While you are doing this put the salad together:

Mixed salad leaves, radishes and some sliced fresh orange & mint leaves. Add a little bit of extra virgin olive oil.

Then add the chicken.

This salad looks amazing so colourful and most of all so yummy!

Winter Health TIPS

How are you coping with the cold winter? Are you more prone to get colds, feel less likely to exercise, maybe eat more, and sleep more…? If so, here are some tips that can help you through the colder months.

First of all make sure you drink enough – and with that I mean water, fruit/vegetable juices or herbal teas. It is easy to drink less during the winter months, as we don’t tend to get so thirsty due to the cold. Water will assist in flushing toxins, prevent colds and flu’s and help with digestion and absorption of good nutrients.

Eat plenty of Fruit and Vegetables. It is easy to fall for some comfort food during winter due to the cold weather. Make sure you keep eating well with lots of fresh fruit and veggies. Soups are great during the colder months. Choose vegetables and fruits that are in season as they are stacked with antioxidants to help prevent colds and flu’s.  Make sure you also remember to eat enough fiber.

You may even want to boost your immune system by taking some extra vitamins or herbs such as Vitamin C & Echinacea. See your naturopath or health food store to find out more.

Winter joyMake sure you keep exercising. Winter is no excuse to hibernate! You are not a bear! Exercise builds your immunity. Exercise outdoors when the sun is out is also beneficial as you will be positively effected by some sunlight. Lack of sunlight has been found to cause changes in mood and levels of anxiety, depression, and irritability. A few minutes a day of authentic or artificial sunlight can boost immunity as well as energy levels.

Make sure you get enough sleep Most adults need seven to nine hours of sleep per night. An adequate amount of sleep is necessary for balanced hormone levels (including human growth hormone and the stress hormone, cortisol), which are necessary for maintaining a healthy weight. A well-rested body will also encourage clear thinking and reasoning, improved mood, and glowing, healthy skin.

Make sure you wash your hands frequently One of the best ways to protect health and avoid illness and infection is by washing hands frequently.

Make your Home Healthy Make sure you air out your house regularly and keep vacuuming to keep the dust under control. Also make sure you use natural cleaning products as harsh chemical cleaners can contribute to a variety of health problems

Use Certified Organic and Natural Skin Care The skin is the largest organ in the body and absorbs anything we leave on the skin. If we use chemical based skincare, it can have a detrimental effect on out health.

So, there you go….plenty of things to do to stay healthy during the winter months.

Magic Fruit salad

Cut pieces of:

Water melon, rock melon, kiwi fruit,  apple. Mix together in a bowl

Add grapes – both green and red and mixed berries on top

A wonderfully colourful fruit and berry salad. Enjoy!

Hot Tuna Salad with Beans, Sweet potato

I made this salad from what I had left in the cupboard and fridge. It is very simple and easy and most of all very yummy!

Steam Sweet Potato & Broccoli. Put on a place. Add a tin of Sweet Chili Tuna with mixed beans. Mix it in. Add cheese on top. Put in the grill to melt the cheese.

Lamb Cutlets with Sweet Potato, Broccoli & Onion

Put minced garlic and fresh cut up rosemary on the lamb cutlets. Fry Lamb Cutlets in a frying pan with olive oil and butter. Add the Onion and fry until brown. Steam Sweet Potato and Broccoli. Serve.

Roast Vegetable Salad with beans

This is such an easy salad to make and it is absolutely beautiful! Start by roasting sweet potato, zucchini, onion and red capsicum. Make sure you roast them with extra virgin olive oil and pinch of sea salt.

As the vegetables has cooled a bit mix it with fresh spinach leaves, red kidney beans (tinned) and a little bit of reduced fat fetta.

Enjoy for a day or two!

This is my favourite breakfast. Home made muesli with oats and lots of seeds and nuts served with natural yoghurt and fresh raspberries. This particular morning I also felt like some beautiful fresh red ruby grapefruit.

Roast cut up Sweet Potato, Carrot & Beetroot Pieces.

Serve with Spinach Leaves and cut up mushrooms & Smoked Salmon, a little bit of sour cream. Sprinkle with Dill & maybe a bit of sea salt.

Laughter is the Best Medicine?

Today I just had one of those “low” days. Not quite on top of the world. So, I started thinking about what I could do to cheer myself up. Hmm, if I could only laugh right now, I thought. So, I started looking at some funny YouTube clips and not long after I started to change. I felt so much better. This made me think about exploring the effects of laughing. Do we do it enough? What happens when we laugh and so on…

I was surprised when I discovered all the benefits of laughing could bring. I also discovered there is even Laughing Yoga and Laughing Therapy!

Here are some of the things that happens and the benefits we reap from laughing, according to different research around the world:

  • We exercise the muscles around the face and also the body – it gives us a workout from inside out! This could possibly be the reason why it is attributes with so many effects of the health of our body.
  • The blood vessels expands and contracts more easily.
  • It has been shown to stabilize blood sugar levels.
  • Laughter can help you cope with pain better.
  • It raises the level of infection-fighting antibodies in the body and boosts the levels of immune cells – the disease fighting cells.
  • Our pulse and blood pressure goes up, and we breathe faster which sends more oxygen to our tissues – it actually gives us an aerobic workout!
  • It has shown to lower Blood Pressure.
  • It clears our mind and thus reduces stress.

I believe that Laughing is one of the best medicines there is. It certainly made me feel better and put that spring back into my feet again and that smile back to onto my face,

So when it comes to Laughing – it is a really serious matter. We need to do it and more often.
